After a super busy couple of weeks I’m taking some time today (after setting up market signs for this weekend) to do a little baking. Not only is it baking day, it’s pineapple day.
There will be a small batch of pineapple pancakes, and Hummingbird cupcakes. Yum!
It’s 11.30 by the time I get home, so perfect for a pancake lunch.
I decide to halve the recipe, and go from there.
Find the recipe here. I changed it slightly, using crushed pineapple and the encompasing juices replaced the butter.
I’m not sure how big they were sposed to be as I easily made 6 with half the recipe. You could make pikelets (similar to blini) if you wanted or bigger and have them plate size.
They were pretty easy to make, you could swap the pineapple for strawberries if you wanted. I’ll be making these again, but for a more filling brunch adding bacon to the mix would be perfect.
Mini Hummingbird Cupcakes
Recipe link I was never exactly sure what a Hummingbird cake was, but I am a convert now. Totally delicious! Banana, pineapple and coconut.
I skipped the cinnamon because I didn’t have any, which may be it’s downfall, as I can taste there is something missing.
And while they look nothing like their gorgeous picture, they are more than comparable taste wise. There is nothing nicer than eating fresh baked, fresh out of the oven baking.
And this was no exception.
Cream cheese icing was the icing on the cake so to speak and they will disappear very quickly. Noticebly as I’ll be sharing with my friends.
